🍠It’s no April fool’s joke… these brownies actually are made with kumara. I first created this recipe when I was in high school and have repeatedly made them since - they were one of the first “must-have” recipes I decided on when creating my cookbook.

They are actually dairy and gluten free as well, but you’d never guess. Think I’m pulling your arm? You’ll have to make them yourself… only available in my cookbook. The recipe in my book is called Kumara & Blackberry Brownies with Manuka Honey Tahini🍠🍯

Skillet Cornbread with Slow Cooked Manuka Smoked Wagyu Brisket, pumpkin, Corn and Spicy Jalapeño Honey🔥this is absolute autumn comfort food!

I love cornbread, especially when it acts as a sponge to soak up a good sauce. @firstlightgrassfed Slow Cooked Manuka Smoked Wagyu Brisket comes ready to heat and eat, so all the flavour is already packed into the sauce. All you need to do is add water and chuck in the oven for 20 minutes. I loaded it over my spongey cornbread fresh from the oven, with a good bit of roasted pumpkin, corn, diced onion and a simple hot jalapeño honey. The flavours were insane🔥

One of my favourite shoots as of late!! The food and drinks @rosemarys_bar are just too good - I really wanted to capture the Rosemary’s atmosphere, personality and those iconic tables to really tell a story with these shots. Such an awesome spot, and I loooved working on this shoot🔥

I’m constantly craving cold drinks on these late

I’m constantly craving cold drinks on these late summer afternoons! Dive into T2 Iced - their range of iced teas are so refreshing, flavourful and low in sugar. As much as I love sipping them straight from the can, I’ve used the Watermelon Fiesta flavour to make a Watermelon & Mint Cooler (which you can dress up all pretty with garnishes of course)!

To make it, simply muddle 1/4 cup chopped watermelon, 2 tbsp fresh lime juice and a handful of fresh mint leaves together in a tall glass. Top up with T2 Iced Watermelon Fiesta, give it a stir and enjoy immediately!

Last week I photographed @jimmycoopslakehouse’s St Paddy’s Day specials, including a Fig & Stout Espresso Martini, Hopster Loaded Fries and of course the annual @lakemanbrewing Hairy Craic Irish Cream Stout on tap (it’s smooth, vanilla-esque and too easy to drink). With sunshine and views of the lake, I reckon it’s the best place to mark the occasion 🍀

This fun little stop motion for @moodys.chicken was a spur of the moment idea at the end of the shoot, once the food had been extensively hand modelled and everyone was hungry. The food disappeared at speed🏃

🌞While I’m still in denial about the change in season, @embra.nz’s current third course is a beautiful way to make the most of late summer heirloom tomatoes! I love the tomato consommé; good thing it also comes with a delicious guanciale focaccia to mop it all up.

It’s a funny feeling cooking from my own book… recipes that were once random ideas, scribbles in a notebook, versions that needed much tweaking, and later finished dishes styled with backdrops, props and elements that could help me tell each recipe’s story. I spent a lot of time on every recipe in my book, so it’s been interesting revisiting them from the other side!
.
Here is a recipe I make all the time (I reckon it’s my mums favourite recipe in the entire book) - a shakshuka inspired by the spicy pungent flavours of kasundi. The dates give it sweetness and texture, the feta adds a nice salty tang, and the egg yolks of course become so silky. It really is a delicious dish - even more so with bread to mop it all up.

🥑Harissa Kumara, Halloumi & Avocado Hash. I love the crispy-charred edges of the kumara, the gooey egg yolk and the velvet-like creaminess of GEM avocados.

This is one of four recipes I developed, styled and shot for @the.avo.tree last year, to promote the launch of GEM avocados in New Zealand. These avos are huge, seriously creamy (like seriously) and have such a buttery delicate flavour. They are honestly the best avos I’ve tasted!!

While GEM avocados are sadly out of season, you can still make this recipe using your favourite avo. Find this, and my other three recipes on their website at www.theavotree.co.nz.

Fish Restaurant at @hiltonauckland has a delicious menu of small and large plates to enjoy from an elevated height at the end of Princes Wharf! I love just watching the ships on the water and people milling around below - the restaurant really is in a prime location. These photos were from a recent photoshoot I did for @fishrestaurantakl in December, before we sat down and sampled absolutely everything. You must order the calamari!

Still dreaming about the Iga Bakar (braised and grilled short ribs) at @lidahlokalsanur! I loved photographing their menu and restaurant last year while travelling in Bali. The menu consists of elevated versions of local dishes - it was such a treat to watch the chefs cook and for us all to sit down and taste everything afterwards. Seriously delicious 🔥

Pinch-me moment… flicking through my recipe column in the latest issue of @dishmagnz! I’ve always dreamed of having my recipes and photos published in a magazine. Dish is a magazine I loved buying at the supermarket when I was a young budding foodie, so it feels pretty full-circle!

I’ve loved creating and shooting these recipes for the high summer issue (issue 117) of Dish Magazine, which is in stores now. Find my column on page 60 - my recipes are (in order of the photo carousel):

In theme with the Lunar New Year, and red’s symbolism of prosperity and good fortune to Chinese culture, I wanted to use a bold, bright red backdrop to shoot @bellinibarauckland’s ‘Fusion Delights’ afternoon tea. You’ll enjoy a range of treats… including Oolong Tea and Lychee Cheesecake, Mandarin and Orange Almond Cake, Matcha and White Chocolate Eclairs for sweets, to savoury morsels like Crispy Pork Belly Bao Bun and Prawn Toast with Chilli Oil.

The afternoon tea is on Thursdays to Sundays, and you’ll need to book online through Bellini Bar’s website.✨

This was a fun shoot with @lakemanbrewing late last year. Whakaipo Bay is a beautiful spot, and was the perfect location to stage different picnic, swimming and SUP scenes on the lake... before enjoying some beers ourselves to finish. Hopefully we get some more sunny days like this for the rest of summer☀️

Sausage & Kūmara Traybake with Sticky Maple, Jalapeño & Chia Seed Jam. Such an easy throw-together recipe that combines savoury, sweet, earthy and bold flavours. I use my dads homemade venison snags here, but of course beef or lamb would work perfectly as well.
